Why in GourmetVip - Vinos Paco&Lola

pacoylola2.jpgPaco & Lola

is a fresh wine, modern, chic and fun that is dynamic and reflects an intense passion for life. An albariño varietal wine from Rias Baixas, smooth and full of life, which has conquered half of the world.

Despite its youth (2006), Paco & Lola has already tasted success in Hollywood. It was the wine served at the Premier of the film Vicky Cristina Barcelona in Los Angeles and has received several international awards, like the  Siver Medal of Packaging Design International Wine & Spirits Competition, “contemporaneous design” cathegory.

Paco & Lola was also the wine served in the Closing party of the Barcelona Fashion Week in 2008.

Salnés Valley

Paco & Lola is produced in Salnés Valley (Pontevedra), in northwest of Spain, the heart of the Rías Baixas region and home to the country´s most exciting white wines.

IMA_VALLEY700.jpg

This is a privilleged natural background for the culvitations of grapes, especially for the albariño variety. The perfect combination of rain, soft temperatures and the franco-sandy soils, with the presence of granite, transform this territory in a unique place for high quality wine production.

Thanks to the fertile soils and a gentle climate, this coastal area has proven itself the perfect place to fully develop the potential of the Albariño variety´s seductive aromas and flavours.

Vineyards | Unique Terroir

Paco & Lola  winery, which is managed by a Cooperative, has more than  200 hectares of vineyards. The average age of these vineyards is 20 years, planted in the traditional "emparrado" system.

These 200 hectares are spread over almost 2.000 small lots, characteristic of Galicia, which thanks to their diverse sizes, soils, location, etc. provide us with a ´coupage´of this extraordinary variety.

IMA_VINEYARDS.jpgThe small oval grapes of this variety have a velvet, buttery feel and are appreciated for the outstanding aromatic intensity they give to the Albariño wines.

The techniques used to elaborate Paco & Lola seek to express a unique terroir through careful viniculture and the latest winemaking techinques.

During all this process, it is of maximum importance to produce wine through balanced agriculture, using environmentally friendly techniques while assuring wine quality and efficient land use.

This production system minimizes the use of fertilizers, chemicals and fossil fuels and restrict their use to strictly necessary and technically justified applications.

An innovative and creative winnery

The winery that produces Paco & Lola is suported by 434 shareholders which make the principal production cooperative in the Rías Baixas region.

IMA_WINERY.jpgThe recent creation of the winery has enabled an investment in equipment, employing the latest winemaking technologies. This technology including stainless steel vats, pneumatic presses and the tangencial microfilter and temperature control systems, allow a rigorous quality control during each stage of the production of Paco & Lola in order to guarantee a magnificent result year after year.

Bringing together the latest advances in enology and the experience of our winemakers allows to take advantage of the outstanding raw materials during the winemaking process.

Elaboration process

The winemaking process goes through the following steps:

• Harvesting. The harvest is performed manually when the maturity analysis indicate that the grapes have reached their optimal point for harvesting.

• Selection. After the collection, there is a initial selection of the fruit. This is done with extreme care in order to protect their quality.

• Destemming and pressing. After the selection, the fruit is destemmed and pressed. The wine is then allowed to settle in stainless steel vats prior to racking off to separate the grape must and pomace (unwanted solids).

• Fermentation and bottling. Once this process is complete, temperature controlled fermentation begins and on conclusion the wine is filtered before being bottled.
