Minaya is a village located in the heart of La Mancha, Albacete North. Until recently, most of his neighbors were linked to the cultivation of saffron. They attended spring planting and then, between September and November, they watched the village landscape was turning blue and the pungent aroma of saffron permeated every corner of their homes.

Everyone, adults and children, participated in the work of collecting and peel rose. On the mantle, the most flowering, the minayeros not cope and were forced to carry the excess to neighboring villages to get processed roses on the same day and so the final quality of the product.

They were then carefully removed the three stigmas internal reddish. Despite technological advances, there is still no mechanism to facilitate peeling, a process that is still done by hand. Finally the stigmas are roasted at different temperatures in a painstaking process that has been passed from generation to generation. It takes almosttwo hundred thousand flowers to get one kilo of saffron.

These flowers need at least a thousand square meters of cultivated land. No wonder that during certain times reached the same price as gold and it came to be called red gold.
